yum to the O

let me start by saying i love dining out.  however, lately i have noticed a curve in my normal routine. 
instead of me suggesting to go out to dinner, i offer to cook.  i don't know what's up.
maybe it's because i have been disappointed with my meals out a few times in a row,
or because i'm trying to watch what i eat,
or because we're trying to save a bit of money.  don't know-just my thing currently. 
this was my latest creation-with the help of my sister when she was visiting for the day.

chicken milanese. arugula salad dressed with balsamic vinaigrette. crispy potatoes
it was so good!

chicken: 
i butterflied and pounded the chicken first. next, i coated the chicken with seasoned flour, then egg, then panko bread crumbs mixed with lemon pepper seasoning, s&p, garlic and parmesan.  when it was finished cooking i squeezed fresh lemon juice on top with fresh basil and cherry tomatoes {from my parents' yard}

potatoes:
peel, cut, boil.  drain.  in a hot skillet- butter and olive oil mixture.  pan saute until crispy golden.  add salt, pepper and garlic powder, mix.  enjoy! {warning:  they are like little cloud/pillows in your mouth-you may exceed your limit}

arugula:
open container of arugula.  rinse.  dress with vinaigrette.  top with tomatoes, parmesean and pepper.

  5. I know what you mean. I hate feeling like I wasted money on a sub-par meal. You, my dear, look like you and your sister ate pretty well. Looks yummy!
